Custo de produção da cafeicultura orgânica: estudo de caso

Abstract

O presente trabalho teve por objetivo geral analisar economicamente o processo produtivo do café orgânico, explorado em parceria. A pesquisa se baseia na teoria do custo e da produção e procurou estimar os custos de produção do café (Coffea arabica L.) no sistema orgânico de manejo. Os dados da cafeicultura que utiliza o manejo orgânico, referem-se à safra 1999/2000. A área de estudo foi o Sul de Minas Gerais, mais precisamente na cidade de Coqueiral. Considerando os indicadores econômicos obtidos na pesquisa, pode-se concluir que as despesas com os recursos variáveis foram as que mais oneraram o custo final do café do café orgânico. Os itens que mais afetaram os custos de produção foram a formação de lavoura, no caso dos recursos fixos, e os gastos com a mão-de-obra, principalmente a temporária. Concluiu-se, também, que o café orgânico, em 1999/2000, apresentou uma situação de lucro econômico, com tendência de expansão da atividade.

The present work had for general objective to analyze the productive process of the organic coffee economically, explored in partnership. The research bases on the theory of the cost and of the production and it tried to esteem the costs of production of the coffee (Coffea arabica L.) in the organic system of handling. The data of the coffee growing that it uses the organic handling, refer to the crop 1999/2000. the study area was the South of Minas Gerais, more precisely in the city of Coqueiral. Considering the economical indicators obtained in the research, it can be concluded that the expenses with the variable resources the ones that more burdened the final cost of the coffee of the organic coffee were. The items that more they affected the production costs they were the farming formation, in the case of the fixed resources, and the expenses with the labor, mainly the temporary. It was ended, also, that the organic coffee in 1999/2000 presented a situation of economical profit, with tendency of expansion of the activity.
