Com o objetivo de avaliar teores de polifenóis, pH, acidez titulável total, sólidos solúveis totais, fibra bruta e resíduo mineral fixo de diferentes espécies de café, foram utilizados o café arábica (Coffea arabica L.), proveniente de Minas Gerais, e o café conilon (Coffea canephora P.), proveniente do Espírito Santo. O café arábica foi classificado quanto à prova de xícara em três tipos de bebida (mole, dura e rio). Utilizou-se o delineamento inteiramente casualizado (DIC), em três repetições. Os dados obtidos foram comparados pelo software Sisvar, usando teste de Tukey a 5% de probabilidade. Os resultados obtidos permitiram concluir que houve diferença significativa entre as bebidas para todas as variáveis estudadas. As bebidas mole e dura
apresentaram menores teores de polifenóis e pH. A bebida dura apresentou menor acidez e maior teor de sólidos solúveis totais. As bebidas dura e rio apresentaram maiores teores de fibra bruta, e as bebidas mole e dura, maiores teores de resíduo mineral fixo.
The study has the objective to evaluate the poliphenolics tenors, pH, total titled, acidity total solids solubles, rude fiber and fixed mineral residue of different species of coffee, they were used the arabica coffee (coffea arabica L.), originating from Minas Gerais state and the coffee conilon (Coffea canephora P.), originating from the Espírito Santo state. The coffee arabica was classified with the cup proof in three drink types (soft, hard and river) they were certain the poliphenolics tenors, pH, total titled acidity, total soluble solids and fixed mineral residue, rude fiber. It was used an entirely casualized delining (DIC), in three repetitions. The obtained data were compared in the software SISVAR using the Test of Tukey with 5% of probability. The
results obtained in the present work allowed to conclude that there was significant difference among the drinks for all the studied variables. The drinks soft and hard had showed presented smaller poliphenolics tenors and pH. The hard drink presented smaller acidity and larger tenor of total soluble solids. The hard drinks and river presented larger tenors of rude fiber and the drinks soft and hard larger tenors of fixed mineral residue.
